The Royal

The Royal is a modern pub focused on quality food, great drinks, and elevated pub experience. The menu is made for sharing and is suited to casual get-togethers with pub classics given the royal touch. The venue opened in November 2019 and is located on the corner  of Wellington & William Streets in the Perth CBD.

The team is passionate about food, wine and hospitality. Executive Chef Chase Weber along with Head Chefs Shane Middleton & Ricky Lim oversee The Royal, Fleur & Willi’s.

Chef de Partie at The Royal

As a Chef de Partie you will join our creative culinary team. You will assist in the preparation and service of food items, providing support and working within an experienced team.

Responsibilities include

  • Assist in the preparation and production of dishes to the highest possible standard
  • Assist in maintaining a minimal food cost by preparing and storing food items correctly
  • Ensure that all kitchen areas are clean and tidy at the end of service/shift
  • Assist with the daily requisition of food and equipment items
  • Ensure proper cleanliness and hygiene procedures are adhered to at all time

What we are looking for

  • Experience in this role working in a quality establishment.
  • Minimum 12 months experience in the role.
  • Sound knowledge of food and produce.
  • Excellent customer service skills.
  • Good communication and organisational skills.
  • Ability to prioritise and work well under pressure in a fast paced, high volume pub and restaurant.
  • Have full Australian working rights.
  • Available to work nights and weekends.

Apprentice Chef at The Royal

About the Role
We are looking for front of house & bar staff to join our team. To assist in all front of house & bar operational aspects and provide exceptional customer service.

fleur

Fleur is an intimate 45-seat restaurant located within The Royal. The menu is intricate and leans to Japanese flavours, focusing on seafood and local produce. The restaurant is currently open for dinners Wednesday to Saturday and offers an afternoon bloom on Saturday afternoons. Over the last 18 months fleur has won best new restaurant (AHA), Best Contemporary Restaurant, best formal/ contemporary Restaurant and Gold Plate Award. The team is passionate about food, wine and hospitality. Group Executive Chef Chase Weber in correlation with Head Chef Shane Middleton oversee Fleur.

Commis Chef at fleur

As a Commis Chef you will join our creative culinary team. You will assist in the preparation and service of food items, providing support and working within an experienced team.

Willi’s is a new addition to The Royal Hotel dining precinct opened in 2019 and is located on the corner of Wellington & William Streets in the Perth CBD. This little gem is heavily focused on banging wines, great service & beautiful ever-evolving share plates centred around amazing produce & creativity under the direction of Group Executive Chef Chase Weber. The team is passionate about food, wine and hospitality. Group Executive Chef Chase Weber along with Head Chef Shane Middleton oversee The Royal, Fleur & Willi’s.

Sous Chef at Willi’s

As Sous Chef you will join our creative culinary team. You will assist in the preparation and service of food items, providing support and working within an experienced team.

Responsibilities include

  • Assist in the creation, preparation and production of dishes to the highest possible standard
  • Assist in maintaining a minimal food cost by preparing and storing food items correctly
  • Ensure that all kitchen areas are clean and tidy at the end of service/shift
  • Assist with the daily requisition of food and equipment items
  • Ensure proper cleanliness and hygiene procedures are adhered to at all time
  • Stock ordering
  • Running the kitchen at times when the Head Chef is unavailable.
  • Teaching and guiding junior staff.
