The West Australian Good Food Guide has tasked Perth’s top chefs with creating a culinary experience celebrating spring and a letter of the alphabet. fleur is delighted to host the third dining experience of the WAGFG Spring ABCs Series presented by Audi.
For our third act in our Spring ABCs Dining series, we’re landing at Fleur at The Royal, where chefs Chase Weber and Shane Middleton have designed a menu around the letter “M” and the best seasonal WA produce, with a focus on premium seafood and the flavours of Japan.
Join us for a 6-course menu beginning with maguro on arrival, moving to mud crab with macadamia, marron flavoured with miso, and mangrove jack with mussels, followed by a marshmallow of native lime and a dessert of marmalade pudding paired with malt sorbet and milk chocolate.
Each course is served with drinks chosen to match perfectly with the menu. Together, it’s an homage to the range of incredible produce our state has to offer, and the kitchen’s creative process.
